Evening y’all ! To recap from an earlier post, I said I would update everyone on my lunches for the last two days. For a brief moment yesterday, I had my grandmother Colleen face timing me while I made my salad. So for now, I’m sharing this for everyone! Lunch number one: Salmon Salad!

Ingredient list:

  1. Asparagus (chopped in small pieces, uncooked.)
  2. Large tomato (chopped)
  3. Cucumber (1, sliced thinly)
  4. Green bell pepper (1, sliced)

Next, we have a very herbal salad dressing.

  1. Fennel (fresh)
  2. Basil (Fresh)
  3. Curly Parsley (Fresh)
  4. Cilantro (fresh)
  5. Green finger hot peppers (minced, 3 large pieces)
  6. Lemon/lime juice (half of each squeezed)
  7. Red finger hot pepper (1 piece, minced)

Mix all the herbs, hot peppers, and lemon/lime juice in a separate bowl, then mix in with the salad ingredients. Add sliced salmon in a salad dish and squeeze more lemon juice over everything. Chill in the fridge and serve. To change it up, don’t do a white wine, have a martini! Preferably an Amaretto martini because you want a balance to the heat and citrus qualities that will be found in the salmon salad. Bon Appetite!

Lunch number two today follows a similar theme: Salad!!! This is my take on a romaine lettuce salad with strawberries for lightness, and highlighting the feta with spice.


  1. Romaine lettuce (chopped in thin stripes)
  2. Tomato (chopped )
  3. salt/pepper to taste
  4. Green bell pepper (1 pepper, chopped)
  5. Strawberries ( slice in half and quarter them)
  6. Green finger hot pepper (2 large pieces, minced)
  7. Red finger hot pepper (1 piece, minced)

In a separate bowl, mix the following together for dressing:

  1. Chives (Chopped, fresh)
  2. Mint (fresh)
  3. Dill (fresh)
  4. Basil (fresh)
  5. Curly parsley (fresh)
  6. Cilantro (fresh)
  7. lime juice (whole lime)
  8. Lemon juice (whole lemon)

Mix all ingredients together and pour onto salad. Toss and serve with feta cheese soaked in black pepper and olive oil. Hope I’ve made you hungry and I’ll see you tomorrow!
